- 4oz continental lentils, cooked (boil for 20mins from dry)
- 4 tbsp oil
- 1 onion, chopped
- 1 clove garlic, crushed
- 4oz sliced mushrooms
- thyme
- salt
- pepper
- 4oz self-raising flour
- 2 eggs
- 1/2 pint milk
- Preheat oven to 220C (or just as hot as it will go if it's Roo's!)
- Make up the batter: make a well in the middle of the flour, crack in eggs and beat in, slowly add milk to avoid lumps
- Heat up 2tbsp of the oil in the dish you're going to use, in the oven
- Soften the onion and garlic in 2tbsp oil, then add the mushrooms
- Stir in the lentils, thyme, salt and pepper
- Pour batter into the preheated dish, then pour the lentil mixture on top
- Cook for 25mins until golden brown, puffed up and gorgeous
If you want sausages too, just add them to the pan before pouring the batter in. And what about a bit of cheese on top at the end? Nice bit of emmenthal... or gruyere... yet to be tested!

I've just done this with peppers, fresh tomato and spring onion instead of the mushrooms, very nice. We were also thinking that some cheese on top would be good.
