Tabouleh

Ingredients
  • 8oz uncooked bulgar wheat
  • ½ diced cucumber
  • 2 oz pine nuts
  • 1 red onion, chopped
  • 1 clove garlic, chopped
  • 5 oz feta cheese
  • 2 tbsp olive oil
  • juice and rind of 1 lemon
  • 4 tomatoes, diced
  • 1 tbsp chopped mint
  • seasoning

Method

  1. Cook the bulgar wheat. Cool it. Mix together the lemon juice and olive oil
  2. Dice the feta cheese. Put the bulgar wheat into a large bowl, add the vegetables and stir through the oil and lemon juice
  3. Add the cheese and pine nuts. Mix in the mint. Season to taste

Serve cold
