Ingredients
- Custard made with 1 pint of milk or from 5 egg yolks, 2oz castor sugar and ¾ pint milk
- 4tsp of coffee
- 400ml boiling water – slightly cooled
- 4tsp coffee liqueur (Tia Maria)
- 400g sponge fingers (French ladies' bedroom biscuits) or fat free sponge
- 250gm mascarpone cheese
- 2oz castor sugar
- 60ml brandy
- 3oz plain chocolate, grated
- Make custard and leave to cool
- Dissolve coffee in water and add coffee liqueur
- Soak sponge in coffee
- Beat together the mascarpone and sugar, stir in the custard and brandy
- Put ½ the sponge in a dish, cover with the mascarpone and half the chocolate; repeat
- Chill
- Eat
