Tiramisu

Ingredients

  • Custard made with 1 pint of milk or from 5 egg yolks, 2oz castor sugar and ¾ pint milk
  • 4tsp of coffee
  • 400ml boiling water – slightly cooled
  • 4tsp coffee liqueur (Tia Maria)
  • 400g sponge fingers (French ladies' bedroom biscuits) or fat free sponge
  • 250gm mascarpone cheese
  • 2oz castor sugar
  • 60ml brandy
  • 3oz plain chocolate, grated

Method

  1. Make custard and leave to cool
  2. Dissolve coffee in water and add coffee liqueur
  3. Soak sponge in coffee
  4. Beat together the mascarpone and sugar, stir in the custard and brandy
  5. Put ½ the sponge in a dish, cover with the mascarpone and half the chocolate; repeat
  6. Chill
  7. Eat
