Mixed Berry Fool

Suggests that it serves 4 but it easily serves 6 or even 8 if looking for a ‘little something’ at the end of a meal.

Ingredients

  • 750g of mixed berries – I used equal parts white, red and blackcurrants and strawberries
  • 4 tbsp icing sugar
  • 200 ml double cream
  • Seeds from 1 vanilla pod – or vanilla extract to taste
  • 200 ml Greek yogurt
Method
  • Blitz the berries and 2 tbsp sugar in the food processor; pass through the mouli to remove seeds and skins
  • Recipe suggests holding back some of the fruit to fold in later to give an ‘interesting texture’. I didn’t, you can. I did have some raspberries to put on the top though
  • Beat cream, rest of sugar and vanilla till thick
  • Fold in the yogurt and fruit puree
  • Spoon into individual dishes and chill
  • Decorate with some whole fruit before serving if you want to
