Wylde Green Chicken

Serves 6

Ingredients

  • 600g chicken breast pieces
  • 2 tbsp peanut butter
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp mustard powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp chilli sauce
  • 1 tbsp rum (or wine vinegar)
  • 300ml water

Method

  • Mix together the peanut butter, crushed garlic and half the oil. Lay the chicken in a dish, pour the mixture over them and work it well into the meat. Leave to marinade for 30 mins.
  • In a large frying pan heat the rest of the oil and dissolve the mustard, paprika, salt and pepper in it.
  • Tip the chicken and marinade into the pan and sauté until coloured.
  • Add the chilli sauce, rum and water and cook over a low heat till done – about 10 minutes.
  • Serve with new potatoes or rice and a green salad
