Ingredients
- 40g butter
- 30ml olive oil
- 675g onions
1 tsp salt - 1 tsp sugar
- 2 cloves garlic
300ml dry white wine
4-6 thick slices French bread - 75g Gruyere cheese
Method
- Melt the butter in a saucepan and fry the thinly sliced onions with the salt and sugar for 10 mins till starting to turn brown.
- Turn heat to lowest setting and add the finely chopped garlic. Cook gently for another 20-30 mins till the onion is golden brown.
- Pour in the wine and add 1 l of water (or stock). Simmer gently for 30 min.
- To serve: Toast the bread and place in the bowls with the soup. Top with grated cheese and grill till bubbling.
