French Onion Soup

Serves 4 – 6

Ingredients
  • 40g butter
  • 30ml olive oil
  • 675g onions
    1 tsp salt
  • 1 tsp sugar
  • 2 cloves garlic
    300ml dry white wine
    4-6 thick slices French bread
  • 75g Gruyere cheese

Method

  1. Melt the butter in a saucepan and fry the thinly sliced onions with the salt and sugar for 10 mins till starting to turn brown.
  2. Turn heat to lowest setting and add the finely chopped garlic. Cook gently for another 20-30 mins till the onion is golden brown.
  3. Pour in the wine and add 1 l of water (or stock). Simmer gently for 30 min.
  4. To serve: Toast the bread and place in the bowls with the soup. Top with grated cheese and grill till bubbling.
